Bright, high-protein, and naturally sweet — this salad hits all the right notes while keeping you full and energized.
Ingredients:
2 medium zucchinis, sliced lengthwise into thin strips
300g ground turkey or chicken
1 cup low-sugar marinara sauce (or crushed tomatoes with herbs)
1 tsp olive oil or avocado oil
½ onion, finely chopped
1 garlic clove, minced
50–60g shredded mozzarella (or plant-based cheese)
Salt, pepper, dried oregano to taste
Instructions:
Preheat oven to 180°C (350°F).
In a pan, sauté onion and garlic in olive oil until translucent.
Add ground turkey and cook until browned. Stir in marinara sauce and season with salt, pepper, and oregano.
In a baking dish, spread the meat sauce on the bottom.
Layer the zucchini slices over the meat (slightly overlapping).
Sprinkle with shredded mozzarella and a pinch of oregano.
Bake for 20–25 minutes or until the cheese is golden and bubbly.
