Ingredients: (serves 1)
5-8 large raw prawns (Argentinian)
1/2 zucchini, diced
1/2 red bell pepper, sliced
1 cup broccoli
1 garlic clove, minced
1/2 teaspoon fresh ginger, grated
1 teaspoon olive oil
1 1/2 teaspoons tamari or low-sodium soy sauce
1 teaspoon lime juice
1 tablespoon fresh basil, chopped
1 cup cauliflower rice or 1/4 cup cooked rice (optional)
Black pepper to taste
Instructions:
Heat the olive oil in a skillet over medium heat.
Add the garlic and ginger and cook for about 30 seconds.
Add the zucchini, broccoli and red bell pepper and cook for 3 to 4 minutes, until just tender.
Gently add the prawns and season with black pepper.
Add the tamari and lime juice, then cook for another 4 to 5 minutes, stirring carefully, until the fish is cooked through.
Remove from the heat and fold in the fresh basil.
Serve over cauliflower rice. (Optional)
