  • 2 medium sweet potatoes, peeled and cut into small cubes

  4. Spread them in a single layer on a baking tray or place them in the air fryer basket.

  5. Roast for approximately 20–25 minutes, turning halfway through, until golden and crisp on the outside and tender inside.

  6. Add the diced red pepper during the final 8–10 minutes of cooking if you prefer it slightly softened.

  7. Transfer the cooked sweet potatoes to a bowl and gently toss with the raw garlic and fresh cilantro.

  8. Add chili flakes or fresh chili if desired and finish with a squeeze of fresh lemon juice.
