Looking for a flavorful, low-carb comfort dish that supports your gut health and keeps you feeling full? This Kimchi Cauliflower Fried Rice is your answer. Packed with probiotics from fermented kimchi, protein from a perfectly fried egg, and fiber-rich cauliflower rice, it’s a spicy, satisfying bowl that’s perfect for lunch or dinner, especially if you're on a semaglutide journey and want to eat clean without sacrificing taste.

Ingredients:
  • 1 ½ cups cauliflower rice (fresh or frozen)

  • ½ cup fermented kimchi, chopped

  • 1 tsp sesame oil or avocado oil

  • 1 garlic clove, minced

  • 1 tsp low-sodium tamari or coconut aminos

  • 1 egg (pasture raised if possible)

  • 1 spring onion, chopped

  • Optional: a few green peas or sliced mushrooms for bulk

  • Optional garnish: black sesame seeds, extra chopped kimchi

Instructions:
  1. Heat oil in a nonstick pan over medium heat. Add garlic and sauté until fragrant.

  2. Stir in the chopped kimchi and sauté for 1–2 minutes.

  3. Add cauliflower rice and stir-fry for 5–6 minutes, until tender. Add tamari and toss well.

  4. In a separate pan, fry the egg sunny-side up (or over-easy if preferred).

  5. Transfer the rice to a bowl, top with the egg, sprinkle green onions and sesame seeds.

Wellness Tip:

Kimchi is a probiotic powerhouse that promotes gut health and digestion—especially beneficial while on semaglutide, which can sometimes cause bloating or sluggish digestion. Swapping rice for cauliflower keeps this dish light, while still hitting that comfort food craving.
