Ingredients:
1 ½ cups cauliflower rice (fresh or frozen)
½ cup fermented kimchi, chopped
1 tsp sesame oil or avocado oil
1 garlic clove, minced
1 tsp low-sodium tamari or coconut aminos
1 egg (pasture raised if possible)
1 spring onion, chopped
Optional: a few green peas or sliced mushrooms for bulk
Optional garnish: black sesame seeds, extra chopped kimchi
Instructions:
Heat oil in a nonstick pan over medium heat. Add garlic and sauté until fragrant.
Stir in the chopped kimchi and sauté for 1–2 minutes.
Add cauliflower rice and stir-fry for 5–6 minutes, until tender. Add tamari and toss well.
In a separate pan, fry the egg sunny-side up (or over-easy if preferred).
Transfer the rice to a bowl, top with the egg, sprinkle green onions and sesame seeds.
