Ingredients: (serves 1)
100 g halloumi, sliced into thick strips
2 cups mixed salad greens
½ cup cherry tomatoes, halved
½ cup cucumber, sliced
¼ cup grapes, halved
1 tbsp pesto
1 tsp olive oil for grilling
Black pepper, to taste
Optional: squeeze of lemon
Instructions:
Slice the halloumi into thick pieces.
Heat a pan or grill pan over medium heat and lightly brush with olive oil.
Grill the halloumi for 1–2 minutes on each side, until golden and slightly crisp.
Add the salad greens, tomatoes, cucumber, and grapes to a large bowl or plate.
Place the warm grilled halloumi on top.
Spoon pesto over the halloumi and salad.
Finish with black pepper and a squeeze of lemon if desired.
