Ingredients: (serves 2)
2 roasted red peppers (from a jar)
½ tin (about 120 g) of butter beans or white beans
20–30 g walnuts
2 eggs (boiled or poached)
1 small garlic clove (raw or ½ tsp garlic powder)
1 tsp tomato puree
½ tsp smoked paprika
1–2 tsp olive oil (optional)
Fresh dill, salt, and pepper to taste
2 slices sourdough or gluten-free bread
Instructions:
In a blender or food processor, combine roasted red peppers, butter beans, walnuts, garlic, tomato puree, and smoked paprika.
Blend until smooth and creamy. Add a splash of olive oil if you’d like a silkier texture.
