Ingredients: (serves 2)
  • 2 roasted red peppers (from a jar)

  • ½ tin (about 120 g) of butter beans or white beans

  • 20–30 g walnuts

  • 2 eggs (boiled or poached)

  • 1 small garlic clove (raw or ½ tsp garlic powder)

  • 1 tsp tomato puree

  • ½ tsp smoked paprika

  • 1–2 tsp olive oil (optional)

  • Fresh dill, salt, and pepper to taste

  • 2 slices sourdough or gluten-free bread

Instructions:
  1. In a blender or food processor, combine roasted red peppers, butter beans, walnuts, garlic, tomato puree, and smoked paprika.
