Ingredients:
  • 400g (14 oz) lean beef chuck or stew meat, cut into cubes

  • 3 medium golden potatoes, peeled and chopped

  • 2 medium carrots, sliced

  • 1 small onion, diced

  • 2 garlic cloves, minced

  • 1 tbsp olive oil

  • 400 ml (1 ¾ cups) low-sodium beef or veggie broth

  • 200 ml (¾ cup) tomato puree or passata

  • 1 tsp smoked paprika

  • 1 tsp dried oregano

  • Salt & pepper to taste

  • Fresh dill for garnish


Instructions:
  1. In a pot, heat olive oil over medium heat. Sauté onion and garlic for 2 minutes.

  2. Add beef cubes, sear on all sides until browned.

  3. Stir in carrots and potatoes.

  4. Add broth, tomato puree, paprika, oregano, salt, and pepper.

  5. Bring to a boil, then reduce to a simmer. Cover and cook for 30–35 minutes until beef and potatoes are tender.

  6. Garnish with freshly chopped dill before serving.
