This hearty stew brings together tender beef, golden potatoes, and a flavorful tomato-based broth with a sprinkle of fresh dill. Balanced in protein and slow-digesting carbs, it’s ideal for cool evenings or when you’re craving real food that fuels — not bloats.

Ingredients:
400g (14 oz) lean beef chuck or stew meat, cut into cubes
3 medium golden potatoes, peeled and chopped
2 medium carrots, sliced
1 small onion, diced
2 garlic cloves, minced
1 tbsp olive oil
400 ml (1 ¾ cups) low-sodium beef or veggie broth
200 ml (¾ cup) tomato puree or passata
1 tsp smoked paprika
1 tsp dried oregano
Salt & pepper to taste
Fresh dill for garnish
Instructions:
In a pot, heat olive oil over medium heat. Sauté onion and garlic for 2 minutes.
Add beef cubes, sear on all sides until browned.
Stir in carrots and potatoes.
Add broth, tomato puree, paprika, oregano, salt, and pepper.
Bring to a boil, then reduce to a simmer. Cover and cook for 30–35 minutes until beef and potatoes are tender.
Garnish with freshly chopped dill before serving.
