Ingredients:
  • 10-15 prawns (approx. 150–200g)

  • fresh ginger (approx 25g)

  • 1 medium zucchini (spiralized)

  • 10 cherry or plum tomatoes

  • 1 small garlic clove

  • 1 small shallot (or red onion), finely chopped

  • 1 tsp avocado oil

  • Salt, pepper, and optional chili flakes to taste


Instructions:
  1. Sauté aromatics: Heat 1 tbsp olive oil in a non-stick pan. Add garlic and ginger, cooking gently for 1 minute.

  2. Cook prawns: Add prawns to the pan. Season with salt, pepper, and chilli flakes. Sauté until pink and slightly crispy (about 3–4 minutes). Remove and set aside.

  3. Warm the veg: In the same pan, add chopped tomatoes and spiralized zucchini. Cook on medium heat for 2–3 minutes until just softened.

  4. Combine & finish: Return the prawns to the pan, drizzle with sesame oil, toss in fresh parsley, and serve warm.
