Semaglutide Recipe: Ginger Prawns with Zucchini Noodles and Plum Tomatoes

Ingredients:
  • 400g (14 oz) lean beef chuck or stew meat, cut into cubes

  • 3 medium golden potatoes, peeled and chopped

  • 2 medium carrots, sliced

  • 1 small onion, diced

  • 2 garlic cloves, minced

  • 1 tbsp olive oil

  • 400 ml (1 ¾ cups) low-sodium beef or veggie broth

  • 200 ml (¾ cup) tomato puree or passata

  • 1 tsp smoked paprika

  • 1 tsp dried oregano

  • Salt & pepper to taste


Instructions:
  1. Sauté aromatics: Heat 1 tbsp olive oil in a non-stick pan. Add garlic and ginger, cooking gently for 1 minute.

  2. Cook prawns: Add prawns to the pan. Season with salt, pepper, and chilli flakes. Sauté until pink and slightly crispy (about 3–4 minutes). Remove and set aside.

  3. Warm the veg: In the same pan, add chopped tomatoes and spiralized zucchini. Cook on medium heat for 2–3 minutes until just softened.

  4. Combine & finish: Return the prawns to the pan, drizzle with sesame oil, toss in fresh parsley, and serve warm.
