A vibrant, flavour-packed meal that keeps blood sugar steady and taste buds happy. Ideal for semaglutide users or anyone craving a nutrient-rich, light yet satisfying dish.
Ingredients:
400g (14 oz) lean beef chuck or stew meat, cut into cubes
3 medium golden potatoes, peeled and chopped
2 medium carrots, sliced
1 small onion, diced
2 garlic cloves, minced
1 tbsp olive oil
400 ml (1 ¾ cups) low-sodium beef or veggie broth
200 ml (¾ cup) tomato puree or passata
1 tsp smoked paprika
1 tsp dried oregano
Salt & pepper to taste
Instructions:
Sauté aromatics: Heat 1 tbsp olive oil in a non-stick pan. Add garlic and ginger, cooking gently for 1 minute.
Cook prawns: Add prawns to the pan. Season with salt, pepper, and chilli flakes. Sauté until pink and slightly crispy (about 3–4 minutes). Remove and set aside.
Warm the veg: In the same pan, add chopped tomatoes and spiralized zucchini. Cook on medium heat for 2–3 minutes until just softened.
Combine & finish: Return the prawns to the pan, drizzle with sesame oil, toss in fresh parsley, and serve warm.
