Ingredients: (serves 1)
200–300 g mixed greens (arugula, butter lettuce, or baby spinach)
½ delicata squash, sliced and roasted or pan-fried in 1 tsp grass-fed tallow
1 ball of burrata cheese
1 tbsp avocado oil (drizzle over greens)
½ tsp balsamic glaze
Sea salt and freshly ground pepper, to taste
Instructions:
Prepare the squash: Slice the delicata squash into thin half-moons, remove the seeds, and roast or pan-fry in tallow until golden and caramelized.
Plate the greens: Arrange the arugula and butter lettuce on a large plate. Drizzle with avocado oil and a light sprinkle of salt and pepper.
Assemble: Add the roasted squash on top of the greens. Tear the burrata gently over the salad.
Finish: Drizzle with balsamic glaze, add a touch more sea salt, and serve immediately.
Tip: You can warm the burrata slightly before plating for extra creaminess.
