Ingredients: (serves 1)
  • 200–300 g mixed greens (arugula, butter lettuce, or baby spinach)

  • ½ delicata squash, sliced and roasted or pan-fried in 1 tsp grass-fed tallow

  • 1 ball of burrata cheese

  • 1 tbsp avocado oil (drizzle over greens)

  • ½ tsp balsamic glaze

  • Sea salt and freshly ground pepper, to taste

Instructions:
  1. Prepare the squash: Slice the delicata squash into thin half-moons, remove the seeds, and roast or pan-fry in tallow until golden and caramelized.

  2. Plate the greens: Arrange the arugula and butter lettuce on a large plate. Drizzle with avocado oil and a light sprinkle of salt and pepper.

  3. Assemble: Add the roasted squash on top of the greens. Tear the burrata gently over the salad.

  4. Finish: Drizzle with balsamic glaze, add a touch more sea salt, and serve immediately.
