Ingredients: (serves 1)
1 cod fillets
1/2 cup cherry tomatoes, halved
1 cups fresh spinach
⅓ cup Kalamata olives
1 tbsp capers
1 cloves garlic, minced
1 tbsp olive oil
½ cup tomato sauce or crushed tomatoes
Salt and black pepper, to taste
Optional: pinch of chili flakes or fresh thyme
Instructions:
Heat olive oil in a pan over medium heat.
Add garlic and cook for about 30 seconds until fragrant.
Add the cherry tomatoes and cook for 3–4 minutes until softened.
Stir in the tomato sauce, olives, and capers.
Add the cod fillets and gently simmer for about 6–8 minutes.
