Chia Oat Protein Waffles
Chia Oat Protein Waffles

These wholesome chia oat waffles are a nourishing way to start the day. Made with oat flour, chia seeds, banana, and creamy coconut yogurt, they're naturally sweetened and packed with fiber to help keep you feeling satisfied. Topped with fresh banana, blueberries, and an extra dollop of yogurt, they make a comforting breakfast that's both nutritious and delicious.
These waffles provide a balanced combination of fiber, protein, and healthy fats, making them an excellent choice while taking GLP-1 medications. Oats and chia seeds are rich in soluble fiber, which helps slow digestion and supports steady blood sugar levels, while the yogurt adds protein for longer-lasting fullness. The natural sweetness from banana means there's no need for refined sugar, creating a satisfying breakfast that supports healthy appetite control.

Ingredients: (serves 2 - makes 4 waffles)
  • 1 cup oat flour

  • 2 tbsp chia seeds

  • 1 ripe banana (½ mashed into the batter, ½ sliced for topping)

  • ½ cup unsweetened coconut yogurt

  • 1 tsp ground cinnamon

  • 1 tsp baking powder

  • ½ cup unsweetened almond milk (or milk of choice)

  • 1 egg (optional, for extra protein and structure)

  • 1 tsp vanilla extract (optional)

  • Pinch of sea salt

  • FOR THE TOPPINGS: Remaining ½ banana, sliced, ¼ cup blueberries (fresh or frozen), ¼ cup coconut yogurt, extra sprinkle of cinnamon

Instructions:
  1. Preheat your waffle maker.

  2. In a large bowl, mash half of the banana.

  3. Add the coconut yogurt, almond milk, vanilla (if using), and egg (if using), then whisk until smooth.

  4. Stir in the oat flour, chia seeds, baking powder, cinnamon, and sea salt until a thick batter forms.

  5. Let the batter rest for 5–10 minutes so the chia seeds absorb some of the liquid.

  6. Lightly grease the waffle maker and cook according to the manufacturer's instructions until the waffles are golden and crisp.

  7. Serve warm topped with the remaining banana slices, blueberries, a dollop of coconut yogurt, and a sprinkle of cinnamon.

Wellness Tip:

Adding chia seeds to breakfast is an easy way to increase your daily fiber intake. When mixed with liquid, chia seeds form a natural gel that slows digestion, helping you stay fuller for longer while also supporting healthy digestion and gut health.
