This bright Mediterranean-style salad combines creamy burrata with crisp fennel and sweet citrus for a beautifully balanced dish. The fennel brings freshness and gentle digestive support, while oranges add natural sweetness and vitamin C. Finished with extra virgin olive oil and fresh herbs, it’s a light yet satisfying plate that works perfectly as a refreshing lunch or elegant starter.

Ingredients: (serves 1-2)

  • 1 fennel bulb, thinly sliced (use a mandolin if possible)

  • 2 oranges, peeled and sliced or segmented

  • 1 burrata ball

  • 1–2 tbsp extra virgin olive oil

  • Salt and freshly ground black pepper, to taste

  • Small handful fresh parsley, roughly chopped (optional but recommended)

Instructions:
  1. Prepare the fennel:
Thinly slice the fennel bulb using a knife or mandolin. Place it in a bowl.

  2. Add the citrus:
Slice or segment the oranges and add them to the fennel.

  3. Season:
Drizzle with extra virgin olive oil and season with salt and black pepper. Toss gently.

  4. Plate the salad:
Transfer the fennel and orange mixture onto a serving plate.

  5. Finish with burrata:
Place the burrata on top of the salad and gently open it.

  6. Garnish:
Sprinkle with chopped parsley and an extra drizzle of olive oil if desired.

Wellness Tip:

Fennel has long been used in Mediterranean cooking to support digestion and reduce bloating, while oranges provide vitamin C that helps the body absorb nutrients and support collagen production. Pairing fresh vegetables with healthy fats from olive oil and burrata helps improve nutrient absorption and keeps meals satisfying even with smaller portions on a GLP-1 plan.
